Chili Fest Rules Amateur Chili Cook-Off Contest

Entry Fee
$25.00 entry fee, per Chili Team; this fee is the cost of you temporary food license and processing fee. Chili Teams to consist of no more than four (4) people. NOTE: The Star Radio Group is collecting all applications and submitting everything (i.e. application and fees) to the Health Department at one time.
Application deadline is Monday, August 23, 2010. Space is limited to the first 30 Amateur Chili Teams. Spaces are reserved upon completion of the application and receipt of fees.
Equipment
The following will be provided to each Chili Team:
10x10 space under amateur cooking tent
One (1) six foot table
Two (2) folding chairs
Propane will be provided (Teams are not allowed to bring their own propane)
Sampling cups
Four (4) Chili Fest Lanyard
Wash Station
Team will need to provide all cooking equipment, utensils, latex gloves and any extra tables or chairs.
Pre-Chili Cook-Off Meeting
A representative from each Chili Team must attend a mandatory Fredericksburg Health Department meeting at The Free Lance-Star building on Wednesday, September 15 at 6PM.
Failure to attend this meeting may result in disqualification. No refund of entry fee will be given.
Saturday, October 9, 2010 - Arrival, Check-in and Inspection
Check-in begins at 7:00AM; all cooks MUST arrive at that time to begin set-up. A pre-assigned 10x10 area will be assigned to each team at that time. After unloading equipment and displays, all vehicles must be outside the festival area by 8:30AM. Each team will also receive competition sampling cups to provide samples to the general public, shortly before Noon.
Cooking areas will be assigned in the order in which completed applications are received.
The Fredericksburg Health Department representative will begin on-site inspections of each team at 8:00AM. No cooking or other preparations can begin until the Health Department has given a team the green light.
Judging
We will have pre-selected Judges that will sample each chili anonymously. Each Chili Team will be assigned a number for judging purposes. Judging will begin at NOON. General Public will also be given ballots to vote on their favorite chili for the “People’s Choice” award. Public voting will be cut off once half of the competitors have run out of chili samples. Sampling prior to NOON could result in disqualification. Winners will be announced at approximately 3PM.

General Rules
1. Each Chili Team must prepare 10 Gallons of Chili.
2. No ingredient may be pre-cooked in any way prior to the commencement of the official cook-off. The only exceptions are commercially sealed canned or bottled tomatoes, tomato sauce, peppers, pepper sauce, beverages, broth, and grinding and/or mixing of spices.
3. Meat may be pre-cut or ground. Meat may not be pre-cooked.
4. No food preparation will be permitted prior to 9AM. No cooking or other preparations can begin until the Health Department has given a team the green light.
5. All other ingredients must be chopped or prepared during the preparation period. All food preparation must be completed under the tent, including chopping of vegetables.
6. The exact starting and ending time of the cooking period are 9AM until Noon. All amateur cookers will begin at the same time and must be prepared to begin serving at Noon.
7. Water Source will be provided from on-site connections with food grade hoses.
8. Hand washing stations and 3-compartment wash stations will be provided by organizer.
9. Chili Team must follow and obey all Fredericksburg Health Department rules and regulations.
10. You are NOT permitted to sell anything at your booth!
11. No outside alcohol permitted for consumption in chili cook area.
Entry form and Temporary Food License applications MUST be turned in by Monday, August 23, 2010.
